About 250 grams Jimikand, mustard oil for vegetables, 1 teaspoon cumin, a pinch of asafoetida, 1 finely chopped onion, 4-5 cloves of garlic, 1 inch ginger, 2 green chillies, 1 big tomato chopped, ½ teaspoon turmeric powder. , 1 tsp red chilli powder, 1 tsp coriander powder, ½ tsp garam masala, salt to taste, 1½ cups water and coriander leaves for garnishing.
Recipe to make Jimikand vegetable:

Before peeling Jimikand, apply oil on your hands and then remove the entire peel thoroughly. Now cut Jimikand into pieces. Apply some salt and turmeric and boil Jimikand for 8-10 minutes so that it becomes soft. Drain the water and keep aside.

Now add mustard oil in a pan, when hot add cumin and asafoetida. Now add finely chopped onion and fry until it turns golden. When onion is roasted, add garlic, ginger and green chilli. Fry these also lightly. Now mix chopped tomatoes and all the other dry spices. Cook the masala well until it releases oil.

Add boiled Jimikand pieces to the masala and mix. Now add water and salt. Cook the vegetable on low flame for 10-12 minutes. When all the spices go inside the Jimikand and the vegetables get cooked, add garam masala on top and cook for 2 more minutes.
