Aromatic Kadhi made with lots of vegetables, gram flour, tamarind water and some special spices. In this, gram flour is roasted and then vegetables are cooked in its curry. This is an introduction to delicious Sindhi Kadhi and Sindhi Kadhi is made by mixing all these ingredients. Another specialty of this Kadhi is that you can add your favorite vegetable in it. Sindhi Kadhi is one of the popular dishes of Sindhis. This Kadhi is made in almost all Sindhi communities. It is definitely made when a guest comes or during a wedding. You can easily make this Kadhi at home.
Ingredients for Sindhi Kadhi
4 tbsp gram flour, 8-10 cluster beans, 5-6 ladyfingers, drumsticks, 8-10 pieces of cauliflower, 1-2 potatoes, 1/3 cup green peas, 1 tomato, half bowl of tamarind water, 1 tbsp ginger paste, 1/2 tsp fenugreek seeds, 1/2 tsp mustard seeds, 3/4 tsp cumin seeds, a pinch of asafoetida, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, 1/3 tsp garam masala, 5-6 curry leaves, 3 split green chillies, finely chopped coriander leaves, salt according to taste
How to make Sindhi Kadhi?
Wash all the vegetables used to make Sindhi Kadhi thoroughly and cut them into big pieces. For tamarind juice, soak the tamarind pulp in a little water. Take out all the spices used. Grind the tomatoes and make a paste and take out the frozen peas. Deep fry all the chopped vegetables and take them out. Heat ghee or cooking oil in a pan, then add fenugreek seeds, mustard seeds, cumin seeds, asafoetida and temper them. After 12-15 seconds, add curry leaves and then add gram flour and fry on medium flame while stirring continuously.
Keep in mind that there should be no lumps in the gram flour. When the gram flour starts giving a good aroma and the color changes a little, then add hot water little by little. Now add turmeric powder, finely chopped ginger, red chili powder to the curry and mix, then add more water as per requirement. Now add green peas, salt and tomato paste to the curry and let it cook. Keep stirring the curry in between. Now add all the vegetables and split green chilies to the Sindhi Kadhi and cook for 7 to 8 minutes. Now add garam masala and tamarind water and cook for 4 to 5 minutes. Open the lid and sprinkle green coriander in the curry and mix, then turn off the gas after 1 minute. Delicious Sindhi Kadhi is ready. Serve hot Sindhi Kadhi with rice and enjoy.
