Carrot Barfi Recipe
First step- To make carrot barfi, you will have to take half a kilo of fresh carrots. If you add mawa i.e. khoya in it, you will need about 1 cup. Half cup cashew powder, 1 cup full cream milk, some chopped cashews, pistachios and cardamom powder are required. 2 spoons of ghee and 1 cup of sugar are required.
Second step- First of all, wash the carrots and wipe them lightly. Now grate the carrots. Pour milk in a pan and add grated carrots to it and keep it to cook on medium flame. Keep stirring it and cook until the carrots are cooked.
Third step- Chop cashews and pistachios and grind cardamom and make powder. Now mash the mawa that you have made or bought from the market well. When the carrots are cooked and the milk dries, add desi ghee to it. While stirring with a spoon, add ghee to the carrots and cook for 5 more minutes. With this the carrots will be roasted in ghee.
Fifth step- Take a tray or plate and grease it with ghee at the bottom. Put the entire prepared carrot mixture on it and smooth it on top. Now keep it to set for some time. Garnish with chopped pistachios and cashews on top. Now cut it with the help of a knife. Cut the barfi into the shape of your choice. Delicious and very soft carrot barfi is ready.
