Method
First of all, put the potatoes to boil in the pressure cooker. Till the potatoes are boiling, we prepare the dough for the kachori.
Sieve the flour and semolina in a vessel, add salt and baking soda, add oil as well and mix them all well with your hand.
Knead soft dough (like the one kneaded for making chapati) with the help of lukewarm water. Cover the dough and keep it aside for half an hour.
Remove the potatoes from the cooker and peel them. Chop the potatoes into small pieces, heat oil in a small pan. Add cumin seeds in hot oil, after roasting the cumin seeds, add coriander powder, green chillies, ginger, potatoes, salt and fry the potatoes for 2-3 minutes while stirring with a spoon.
Break a little dough (equal to 1 lemon) from the kneaded dough. Place the dough on the palm, expand it with the help of fingers, make a small depression in it and place one or one and a half teaspoon of potato mixture on it, lift the dough from all sides with the help of fingers and mix, press and close it. Place the closed kachori on the palm and press it with the help of the other palm to flatten it, place it on the rolling board and expand it by applying less pressure. All the kachoris have to be prepared in this way.
Now heat oil in a pan to fry the kachoris. Put the kachoris in hot oil and fry them on medium flame till they turn brown on both sides.
Spread napkin paper on a plate or basket. Take out the kachoris and place them on this plate. Prepare all the kachoris by baking them in this manner. Eat hot kachoris with green and sweet chutney.
