Today we will tell you about Amla green chutney. Its spicy taste attracts everyone. It is not only fun to eat, but also nourishes the body. Its pungency and sourness enhances the taste of food. Making this chutney is easy. This is a healthy dish. You can eat it with roti, paratha, puri, kachori or anything.
Material
Amla – 10 (about 250 grams)
Whole coriander – 1 teaspoon
Cumin – 1 teaspoon
Urad dal – 12 teaspoon
Desi ghee – 1 teaspoon
Garlic – 56 cloves
Green chilli – 56
Dry red chilli – 56
Salt – as per taste
Water – as per requirement
Coriander leaves – as per taste
Method
First of all, take fresh Amla and wash it thoroughly with fresh water 23 times. Then cut it into small pieces with the help of a knife. Now keep the pan on medium flame. Add 1 teaspoon whole coriander, 1 teaspoon cumin, 12 teaspoon urad dal and 1 teaspoon desi ghee and fry lightly. Once roasted, add 56 garlic cloves, 56 green chillies and 56 dry red chillies. Add chilli. Then fry all this lightly.
When chilli and garlic are roasted, add chopped Amla to it and mix well. After this, add salt and a little water to it, cover it and let it cook on medium flame for 23 minutes. When the Amla becomes half ripe, the bitterness inside it will go away. As soon as it is half cooked, take it out in a plate and after cooling, keep it in a jar in the mixer.
Add coriander leaves and a little water to it and grind it. If you want, you can also add mustard oil and lemon juice to it.
